Our cuisine pays tribute to the Spanish La Mancha culinary tradition with a contemporary twist. We focus on fresh, seasonal, and locally sourced ingredients, staying true to the authentic flavors of the land while embracing innovation. The menu evolves with the seasons and available produce, always upholding the belief that quality comes before trends.

Among our signature dishes are the Villadiego cheese brick with apple jam, the creamy rice with small game from Campo de Calatrava, and the grilled marinated venison loin from the Montes de Toledo. To finish, desserts like homemade quince jelly with semi-cured Villadiego cheese or the now classic Villadiego cheesecake are the perfect ending.
